Katsu,
Nice post, it seems like yor really doing some thinking about your training. I have a few thoughts about what you have written. First off though, if you mean JKD I have no clue, what I have written is based on "formal training" in martial arts.

I have come to a point in MA formal training where i have nothing left i feel to learn from them(this is for fighting and self defense purposes

Find a new teacher, there is always something to learn. Martial artists change teachers because their needs change over time, it is possible to outgrow a teacher and have to find a new one. You can also start teaching a little, newbies are in my opinion fantastic teachers. Someone who knows nothing can teach you alot about yourself.

now id love to go to China or somewhere to train in the old ways

You may be dissapointed by what you find. The old ways were born out of a need for combat, something that is no longer applicable.

Seems like all the instructors ive seen on TV and in person want a mimic of themselves. They dont want you to do the techniques in a confortable manner, they want it done text book fashion. I dont see the probably in doing a "untext book" technique if it is effective for the purpose your using it for. Why would you want to put yourself in a position you dont feel comfortable with from the get go, apply the technique, and hope that someday with enough repetition, you'll be comfortable.

Again, its the teacher and I would dare say a question of ego. From the start, (as I am quite sure you understand but for the benefit of others

) there is a reason for the textbook manner.
I tell the guys that bitch about our beginning stance that they are free to study something else. Once you can walk,
then learn to run, hop, skip and jump. Again, since youve likely been studying for quite some time, these does not apply to you but it may to others that are starting out. If your not doing what is required by the art but rather your own comfortable variation, are you still learning the art?
I look at it as a basic catalogue of techniques, I am free to pick and choose what to use and when to use it, its just really nice to have several things to choose from.
Anyway, just some thoughts.
cheers,
